I've tested on:

On my Mac Mini M1:

Chrome
Firefox
Safari

On my iPad 7:

Chrome

Safari

On my iPhone 13:

Chrome
Safari

All the above running current operating systems (I updated system software literally yesterday, Saturday). I don't have access to a Windows box, nor to an Android device, or a Linux system.

My guess, though, is that you may have a setting that overrides certain things a web page requests (in this case, a color palette).

I'm using a pretty strong ad blocker, that might be it.

I have a Mac running 13.2.1...
